Hog Heaven in Nashville, Tennessee We’ve always associated barbecued chicken with white barbecue sauce with Big Bob Gibson’s in Decatur, Alabama. So imagine our surprise finding the same dish—although prepared very differently—in Nashville, Tennessee. Katy and Andy Garner have run this cinderblock bbq shack since 1989, turning out tender, smoky barbecued chicken and pulled pork—served with a distinctive regional twist—on the tasty cornmeal pancakes the locals called “cornbread.” (The ingredients are cornmeal, self-rising flour, buttermilk, and eggs.) The tangy white barbecue sauce is based on buttermilk and mayonnaise. (That’s as close as we got to a recipe.) Anyone have a great recipe for Tennessee-style cornbread or white barbecue sauce? Post it on the BBQ Board and let’s give red sauce a run for its money. P.S. If you’re in the Nashville area, Hog Heaven is located in Centennial Park.
