Readers of my books know my enthusiasm for planked salmon. In October, we prepared it for 300 people at a gala dinner at the Kohler Food & Wine Experience in Kohler, Wisconsin. We roasted the fish in a giant smoker oven and set up a huge assembly line to serve it.
